- 2-3 medium zucchini, peeled and sliced
- 3 cloves garlic, minced
- Basil
- Parsley
- Olive oil
- 1 medium tomato, chopped (optional)
- Parmesan cheese
Steam zucchini until soft. Mash zucchini in a bowl until it is the consistency of mashed potatoes. Add garlic and basil. Stir in parsley, olive oil, tomatoes, and cheese. Serve warm or cold.
